Flat contact is the reason. A wedge spreads your weight across the whole footprint instead of concentrating it under a separated heel, which reduces fatigue over a day on concrete or a roof deck. The flat profile also will not catch on ladder rungs or roof edges the way a raised heel can, and the shallower tread tracks less debris onto finished floors.
