The silhouette and how you put them on. The western models are 11-inch square-toe pull-ons with no laces; the American Heritage moc toe line is a laced 6 or 8-inch boot with a rounded wrapped toe. The construction and welt are shared, so the difference is shape and entry rather than quality.
The shape is the same and everything underneath differs. A western work boot adds an ASTM-rated toe on the rated models, a work outsole built for traction on the ground, and usually a cushioned footbed. A traditional cowboy boot has a smooth leather sole designed to slide in and out of a stirrup.
With caution. The gripping work outsole that makes these good on the ground is exactly what you do not want in a stirrup, since a smooth sole is what lets your foot slide free if you come off. If you ride regularly, check the sole rather than assuming a western-shaped boot is a riding boot.
A square toe carries its width straight across the front rather than tapering, putting room over the joints that swell first on a long day. That is why it dominates western work boots. A full-grain leather finished with a heavy surface wax, so scratches and creases lighten and the leather develops a pull-up effect and patina as it wears. It hides scuffs well and is durable. It is not waterproof on its own, which requires a sealed membrane, so check the title for both.
Snug at the heel, since there is no lacing to take up slack. Some heel movement when new is normal and settles as the leather takes your shape. If the heel lifts clear or your toes reach the end, the boot is too long, and the fix is a shorter size rather than breaking them in.
Most are, and it is stated in the product title. The 11-inch shaft is a real advantage here, since a waterproof boot only protects to its collar and a tall pull-on keeps you dry through considerably more standing water than a 6-inch boot. See our Thorogood waterproof range.
